Easy Slow Cooker Teriyaki Meatballs

These meatballs are made with ground beef and seasoned with garlic and ginger, then simmered in a homemade teriyaki sauce for a sweet and savory dish. The recipe takes about 6 hours in the slow cooker and serves 4-6 people.

Ingredients

  • 1 pound ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • 1/4 teaspoon black pepper
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • Green onions for garnish (optional)
  • Sesame seeds for garnish (optional)

Instructions

  1. Make the Meatballs: In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, ginger, and black pepper. Mix until well combined and form into 1-inch meatballs.
  2. Prepare the Sauce: In a separate bowl, whisk together soy sauce, honey, and rice vinegar.
  3. Slow Cook: Place the meatballs in the slow cooker and pour the teriyaki sauce over them. Cover and cook on low for 6 hours or on high for 3 hours.
  4. Thicken the Sauce: About 30 minutes before serving, stir in the cornstarch mixture to thicken the sauce. Cover and continue cooking.
  5. Serve: Once cooked, serve the meatballs over rice or noodles, garnished with green onions and sesame seeds if desired.
