On cold evenings I lean on Crockpot Garlic Herb Pork Roast more than almost anything else I cook. The pork roast slowly softens against the garlic until the whole pot turns savory and warm. It is the kind of meal I can start before work and mostly forget about until the timer reminds me.

Perfect for busy days, this crockpot recipe requires just a few ingredients and yields a hearty meal that the whole family will enjoy.

Tender and Flavorful Pork Roast in a Crockpot

This recipe features a succulent pork roast seasoned with garlic and a blend of herbs, slow-cooked to perfection. It takes about 8 hours in the crockpot and serves 6 people, making it ideal for family dinners or meal prep.

Ingredients

  • 3-4 pounds pork roast (shoulder or loin)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 onion, quartered
  • 2 carrots, chopped (optional)
  • 2 potatoes, chopped (optional)

Instructions

  1. Prepare the Pork: Pat the pork roast dry with paper towels. In a small bowl, mix together the minced garlic, rosemary, thyme, olive oil, salt, and pepper. Rub this mixture all over the pork roast.
  2. Set Up the Crockpot: Place the quartered onion at the bottom of the crockpot. If using, add the chopped carrots and potatoes around the onion.
  3. Add the Pork: Place the seasoned pork roast on top of the vegetables in the crockpot. Pour the chicken broth around the roast.
  4. Cook: Cover the crockpot and cook on low for 8 hours or on high for 4-5 hours, until the pork is tender and easily pulls apart with a fork.
  5. Serve: Once cooked, remove the pork roast from the crockpot and let it rest for a few minutes before slicing. Serve with the cooked vegetables and some of the broth drizzled over the top.
