Slow Cooker Taco Casserole Recipe

Slow Cooker Taco Casserole served in a bowl ready to eat

This slow cooker taco casserole layers seasoned ground beef with black beans, corn, and a can of diced tomatoes with green chilies until everything melts together. Crushed tortilla chips and shredded cheddar go on top for that familiar taco-night feel without the assembly line.

The recipe is easy to follow and perfect for busy weeknights, allowing you to prepare the ingredients in advance and let the slow cooker do the work.

Hearty Slow Cooker Taco Casserole

This taco casserole features layers of seasoned ground beef, black beans, corn, and cheese, all cooked together in a slow cooker. It takes about 6 hours on low and serves 6 people, making it a great option for family meals or gatherings.

Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream (optional for serving)
  • Chopped green onions or cilantro for garnish (optional)

Instructions

  1. Brown the Beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Combine Ingredients: In the slow cooker, combine the browned beef, black beans, corn, diced tomatoes, and taco seasoning. Stir well to combine.
  3. Layer the Casserole: Add half of the crushed tortilla chips on top of the mixture, followed by half of the shredded cheese. Repeat the layers with the remaining chips and cheese.
  4. Cook: Cover and cook on low for 6 hours or on high for 3 hours, until the cheese is melted and bubbly.
  5. Serve: Once cooked, serve hot, topped with sour cream and garnished with green onions or cilantro, if desired.

I set out bowls of sour cream, sliced jalapenos, and green onion so everyone can build their own plate. It is an easy way to feed a crowd, and the leftovers reheat surprisingly well.
