Ingredients

  • 1 cup dried lentils, rinsed and drained
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups diced tomatoes (canned or fresh)
  • 2 cups spinach or kale (optional, added at the end)

Instructions

  1. Prep the Ingredients: Rinse the lentils and chop the vegetables.
  2. Combine Ingredients: In the slow cooker, add lentils, onion, carrots, celery, garlic, broth, cumin, thyme, bay leaf, salt, and pepper.
