Creamy Indian Milk Cake With a Soft Caramelized Texture

Milk cake is the one where milk is cooked down until it thickens and turns beige at the edges, the kalakand style. I cook it until it just holds a shape, then set it soft, not dry.

This recipe for Indian Milk Cake is straightforward, allowing you to create this flavorful dish at home. You can adjust the sweetness and garnishes to suit your taste.

This Indian Milk Cake features a rich, creamy base made from fresh milk that is cooked down with sugar and flavored with cardamom. The texture is wonderfully soft and slightly caramelized on the surface, making it a perfect indulgence for dessert lovers. This recipe typically takes about an hour to prepare and set, yielding around 12 pieces.

Ingredients

  • 1 liter whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon lemon juice or vinegar
  • 1 tablespoon ghee (clarified butter)
  • Chopped nuts (such as pistachios or almonds) for garnish
  • Saffron strands (optional) for garnish

Instructions

  1. Boil the Milk: In a heavy-bottomed pan, bring the milk to a boil, stirring frequently to prevent it from sticking.
  2. Curdle the Milk: Once the milk boils, reduce the heat and add lemon juice or vinegar gradually, stirring gently until the milk curdles. Remove from heat and allow to cool.
  3. Strain the Curdled Milk: Use a muslin cloth or fine sieve to strain the curds and separate the whey. Rinse the curds under cold water to remove any sour taste and squeeze out excess water.
  4. Cook the Mixture: In a clean pan, add the curds back along with sugar and cardamom powder. Cook on medium heat, stirring continuously until the mixture thickens and pulls away from the sides, taking about 15-20 minutes.
  5. Set the Cake: Grease a plate or tray with ghee and transfer the cooked mixture, leveling it with a spatula. Allow it to cool down to room temperature and set for 30 minutes.
  6. Garnish and Cut: Once set, cut the cake into desired shapes and garnish with chopped nuts and saffron strands if using. Serve cool or at room temperature.
