Mille-feuille is the pastry stack of crisp leaves and vanilla custard, and the puff has to shatter or it is not right. I bake the pastry hot so the layers rise and stay brittle under the cream.
Creating this dessert may seem daunting, but with clear steps, you can achieve a stunning result that’s sure to impress. The combination of crispy pastry and smooth custard creates a delightful treat for any occasion.
Classic French Mille-Feuille with Vanilla Custard

The Mille-Feuille, or Napoleon, is composed of layers of crisp pastry filled with silky vanilla custard, often finished with a sprinkle of powdered sugar or chocolate glaze. This recipe serves about 8 portions and takes about 1 hour for assembly, excluding chilling time for the custard.
Ingredients
- 1 package of puff pastry sheets (2 sheets)
- 2 cups milk
- 1 vanilla pod or 2 teaspoons vanilla extract
- 3 large egg yolks
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 2 tablespoons unsalted butter
- Powdered sugar for dusting
- Chocolate or caramel sauce for drizzling (optional)
Instructions
- Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry on a floured surface to smoothen it, then cut it into equal rectangles. Prick the surface with a fork to prevent puffing too much during baking.
- Bake the Pastry: Place the rectangles on a baking sheet lined with parchment paper, and cover with another sheet of parchment and another baking sheet on top to weigh it down. Bake for about 15-20 minutes until golden brown. Allow to cool completely.
- Make the Vanilla Custard: In a saucepan, heat the milk and vanilla pod (or extract) until it simmers. In a bowl, whisk the egg yolks, sugar, and cornstarch until smooth. Gradually add warm milk to the egg mixture, whisking constantly, then return to the saucepan and cook over medium heat until thickened.
- Finish the Custard: Remove from heat and stir in the butter until melted. Transfer the custard to a bowl, cover with plastic wrap directly on the surface to prevent a skin from forming, and refrigerate until chilled.
- Assemble the Mille-Feuille: Once the pastry and custard are cool, place one layer of pastry on a plate, add a layer of custard, then top with another pastry layer. Repeat until all layers are assembled.
- Serve: Dust the top with powdered sugar and drizzle with chocolate or caramel sauce if desired. Slice carefully and serve chilled.
