We all know those typical chicken entrees – but have you ever thought to pair the flavors of sweet and savory? Here’s a unique rendition of that using this season’s fresh blackberries, fresh mint leaves and chicken. Just add a side dish like asparagus, salad, or on top of a bed of rice or potatoes and call it tonight’s dinner. We know it will leave your mouth watering for that next bite!
Ingredients:
4 chicken breasts
2 tbsp olive oil
1 tbsp garlic, minced
2 tbsp rice vinegar
1 tsp grated fresh ginger
5 oz blackberries
1/4 cup blackberry jam
2 tbsp Jagermeister or other dark liquor
1 tsp soy sauce
1/2 tsp salt
2 tsp fresh mint leaves (chopped finely)
Directions:
In large saucepan, heat to high. Pour olive oil, then place chicken breast into pan, covering both sides with salt and pepper. Cook for approximately 3 minutes on each side, until golden brown. Remove chicken from pan, and set aside for the next step. In same saucepan or skillet over medium high heat, add all ingredients and stir. Let the mixture cook to a rolling boil, stirring constantly. Pour over grilled chicken and serve immediately. Enjoy!
