Fraisier is the strawberry cream cake with whole berries stood up against the side so they show through each slice. I line the strawberries in a tight row so the cut face looks like a red stripe.

Classic French Fraisier Cake with Fresh Strawberries

This Fraisier Cake is composed of layers of sponge cake soaked in syrup, a smooth crème mousseline enriched with vanilla, and adorned with fresh strawberries. The recipe yields about 8 servings and is a perfect centerpiece for special occasions.
Ingredients
- 4 large eggs
- 120g granulated sugar
- 120g all-purpose flour
- 40g unsalted butter, melted
- 1 tsp vanilla extract
- 300g fresh strawberries, hulled and sliced
- 200ml heavy cream
- 200g crème pâtissière (custard cream)
- 100g powdered sugar for decoration
- Strawberry syrup (for soaking)
- Chocolate shavings or additional strawberries for garnish
Instructions
- Prepare the Genoise Cake: Preheat your oven to 180°C (350°F). In a mixing bowl, whisk the eggs and granulated sugar until pale and fluffy. Gently fold in the flour and melted butter, then pour the batter into a lined cake pan. Bake for 20-25 minutes until golden and a toothpick comes out clean.
- Make the Crème Mousseline: In a bowl, combine the crème pâtissière with whipped cream until smooth and fluffy. Keep chilled while you prepare the strawberries and cake.
- Assemble the Cake: Once the sponge has cooled, cut it into two equal layers. Soak the first layer with strawberry syrup, then spread half of the crème mousseline over it. Arrange sliced strawberries on top, then repeat the process with the second layer of sponge cake, crème mousseline, and strawberries.
- Chill the Cake: Refrigerate the assembled cake for at least 2 hours to set properly.
- Decorate: Once set, remove the cake from the mold. Dust the top with powdered sugar, and garnish with chocolate shavings or more strawberries if desired. Slice and serve chilled.
