Easy Spinach and Feta Spanakopita Triangles Recipe

These triangles feature a rich filling of sautéed spinach, creamy feta, and aromatic herbs, all wrapped in crispy phyllo dough. The recipe yields about 24 triangles and takes approximately 1 hour from start to finish.

Ingredients

  • 1 package (16 oz) phyllo dough, thawed
  • 1 pound fresh spinach, chopped (or 10 oz frozen spinach, thawed and drained)
  • 1 cup feta cheese, crumbled
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup unsalted butter, melted
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Filling: In a skillet, sauté the chopped onion and garlic in a little olive oil until soft. Add the spinach and cook until wilted. Remove from heat and let cool slightly.
  2. Mix the Filling: In a large bowl, combine the sautéed spinach mixture with feta, ricotta, Parmesan, dill, nutmeg, salt, and pepper. Mix until well combined.
  3. Prepare the Phyllo: Preheat the oven to 375°F (190°C). Lay out one sheet of phyllo dough on a clean surface and brush lightly with melted butter. Layer another sheet on top and brush again with butter.
  4. Form the Triangles: Cut the layered phyllo into strips about 3 inches wide. Place a tablespoon of the filling at one end of each strip. Fold the corner of the strip over the filling to form a triangle. Continue folding the triangle along the strip until you reach the end. Brush the top with beaten egg to seal.
  5. Bake: Place the triangles on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown and crispy. Serve warm.
