Delicious Spinach and Artichoke Stuffing

Baked spinach and artichoke stuffing in a rustic dish, garnished with cheese, on a wooden table with autumn decorations.

This stuffing features a delightful mix of sautéed spinach, artichokes, bread cubes, and savory seasonings. It takes about 45 minutes to prepare and bake, serving 6-8 people.

Ingredients

  • 1 loaf of bread, cubed (about 8 cups)
  • 2 cups fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup vegetable or chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until translucent, about 3-4 minutes. Stir in the chopped spinach and artichokes, cooking until the spinach is wilted.
  3. Combine Ingredients: In a large bowl, combine the cubed bread, sautéed vegetables, broth, mozzarella cheese, Parmesan cheese, thyme, salt, pepper, and red pepper flakes. Mix well until the bread is evenly coated.
  4. Transfer to Baking Dish: Pour the stuffing mixture into a greased 9×13 inch baking dish, spreading it evenly.
  5. Bake: Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown.
  6. Serve: Let it cool slightly before serving. Enjoy your Spinach and Artichoke Stuffing as a delicious addition to your Thanksgiving feast.
