Juicy Herb Butter Roast Turkey

A golden-brown roasted turkey with herb butter, garnished with herbs, on a rustic table with Thanksgiving side dishes.

This roast turkey is seasoned with a rich herb butter mixture, resulting in a beautifully golden skin and moist meat. The recipe takes about 4 hours from start to finish and serves 8-10 people.

Ingredients

  • 1 whole turkey (12-14 pounds)
  • 1 cup unsalted butter, softened
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups low-sodium chicken broth

Instructions

  1. Prepare the Herb Butter: In a bowl, combine softened butter, rosemary, thyme, sage, garlic, salt, and pepper. Mix until well blended.
  2. Prep the Turkey: Remove the turkey giblets and pat the turkey dry with paper towels. Gently loosen the skin over the breast and thighs without tearing it.
  3. Apply the Herb Butter: Rub the herb butter mixture under the skin and all over the turkey. Place the quartered onion, carrots, and celery inside the cavity.
  4. Roast the Turkey: Preheat the oven to 325°F (165°C). Place the turkey on a roasting rack in a roasting pan. Pour the chicken broth into the pan. Roast the turkey for about 3 to 4 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  5. Baste Occasionally: Baste the turkey with the pan juices every 30 minutes to keep it moist.
  6. Rest and Serve: Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving. Serve with your favorite sides.
