Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup BBQ sauce, plus more for serving
  • 4 slices of rustic bread or panini bread
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/2 cup sliced red onion
  • 1/2 cup spinach leaves or lettuce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Chicken: Preheat your grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper, then grill for 6-7 minutes per side, or until fully cooked and juices run clear. Brush with BBQ sauce during the last minute of cooking.
