  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (8 oz) tomato sauce
  • 2 cups beef or chicken broth
  • 2 cups elbow macaroni
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Chopped green onions or cilantro for garnish (optional)

Instructions

  1. Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey with the chopped onion and minced garlic until fully cooked. Drain excess fat.
  2. Combine Ingredients: Transfer the cooked meat mixture to the crockpot. Add kidney beans, black beans, diced tomatoes, tomato sauce, broth, chili powder, cumin, salt, and pepper. Stir well to combine.
  3. Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  4. Add Pasta: About 30 minutes before serving, stir in the elbow macaroni. Cover and continue cooking until the pasta is tender.
