Delicious Chicken Alfredo Spinach Panini
This grilled panini features marinated chicken breast, creamy Alfredo sauce, and fresh spinach, pressed between slices of your favorite bread. The cooking process takes about 30 minutes and serves 2 people.
Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup Alfredo sauce
- 1 cup fresh spinach leaves
- 4 slices of bread (ciabatta or sourdough recommended)
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let rest before slicing.
- Assemble the Panini: Spread a tablespoon of Alfredo sauce on each slice of bread. Layer sliced chicken, fresh spinach, and shredded mozzarella on two slices of bread. Top with the remaining slices to form sandwiches.
- Grill the Panini: Heat a panini press or grill pan over medium heat. Brush the outside of the sandwiches with the remaining olive oil. Grill the sandwiches for about 3-5 minutes, or until the bread is golden brown and the cheese is melted.
- Serve: Remove the panini from the grill, slice in half, and serve warm.
