These soft pretzels are filled with a savory mixture of shredded BBQ chicken and cheese, then baked to golden perfection. The recipe yields about 8 pretzels and takes approximately 1 hour from start to finish.

Ingredients

  • 1 ½ cups warm water (110°F to 115°F)
  • 2 tablespoons granulated sugar
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup cooked shredded chicken
  • 1/3 cup BBQ sauce, plus more for serving
  • 1 cup shredded mozzarella cheese
  • 1/4 cup baking soda
  • 1 large egg, beaten (for egg wash)
  • Coarse sea salt for sprinkling

Instructions

  1. Activate the Yeast: In a large bowl, combine warm water, sugar, and yeast. Let sit for about 5 minutes until frothy.
  2. Make the Dough: Add the flour and salt to the yeast mixture. Mix until combined and then knead the dough on a floured surface for about 5-7 minutes until smooth.
  3. Prepare the Filling: In a medium bowl, combine shredded chicken with BBQ sauce and mozzarella cheese until well mixed.
  4. Shape the Pretzels: Divide the dough into 8 equal pieces. Roll each piece into a long rope (about 20 inches). Shape into a U, twist the ends together, and press them into the bottom of the U to form a pretzel shape.
  5. Boil the Pretzels: In a large pot, bring 10 cups of water and the baking soda to a boil. Boil each pretzel for about 30 seconds, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.
  6. Brush and Sprinkle: Brush each pretzel with the beaten egg and sprinkle with coarse sea salt.
  7. Bake: Preheat the oven to 475°F (245°C) and bake the pretzels for about 12-15 minutes or until golden brown.
  8. Serve: Allow to cool slightly, then serve warm with additional BBQ sauce for dipping.
