The coconut jelly is the soft set one with creamy layers, the Vietnamese take. I set it cold in layers so they stay distinct and the texture stays smooth, not rubbery.
The jelly is layered with rich coconut cream and can be customized with various fruits like mango, pineapple, or lychee, making it a vibrant addition to any meal or a standalone dessert.
Chilled Coconut Jelly Dessert Recipe

This recipe creates a beautiful layered coconut jelly with a smooth texture and vibrant colors, perfect for impressing guests or enjoying a refreshing treat. The preparation time is about 30 minutes, and it requires chilling to set properly, serving approximately 6 people.
Ingredients
- 1 can (400 ml) coconut milk
- 1/2 cup sugar
- 2 teaspoons agar-agar powder
- 1/2 cup water
- 1 cup coconut cream
- 1/4 cup sugar (for coconut cream layer)
- Fresh tropical fruits (like mango, peaches, or lychee), diced
- 1 teaspoon vanilla extract (optional)
Instructions
- Prepare the Agar-Agar: In a small saucepan, mix the water and agar-agar powder. Bring to a boil and stir for about 5 minutes until fully dissolved.
- Make the First Layer: In another pot, combine the coconut milk and sugar over medium heat. Stir until the sugar is dissolved, then add the dissolved agar-agar mixture. Pour this into a mold or serving dish to create the first layer. Allow it to cool slightly, then refrigerate until set.
- Prepare the Coconut Cream Layer: In a separate bowl, whisk together the coconut cream and sugar until smooth. You can also add vanilla extract for extra flavor. Once the first layer is set, pour the coconut cream mixture over it and return it to the refrigerator to set again.
- Add the Fruit Layer: Once the coconut cream layer has set, add the diced fresh fruits on top. You can either add an additional layer of coconut jelly or simply serve it as a fruit topping.
- Chill and Serve: Let the assembled jelly chill in the refrigerator for at least 2-3 hours or until fully set. Cut into squares or scoop out servings to enjoy your coconut jelly creation.
