These tacos feature crispy tofu tossed in a savory peanut sauce, served in warm tortillas and topped with fresh vegetables like cabbage, carrots, and cilantro. The recipe takes about 30 minutes to prepare and serves 4 people.

Ingredients

  • 14 oz firm tofu, drained and pressed
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha or chili paste (optional)
  • 8 small tortillas (corn or flour)
  • 1 cup shredded cabbage
  • 1 cup grated carrots
  • Fresh cilantro for garnish
  • Chopped peanuts for garnish (optional)

Instructions

  1. Prepare the Tofu: Cut the pressed tofu into small cubes. Heat a non-stick skillet over medium heat and add a little oil. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes.
  2. Make the Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, maple syrup, lime juice, and sriracha until smooth.
  3. Combine Tofu and Sauce: Once the tofu is cooked, reduce the heat to low and pour the peanut sauce over the tofu. Stir to coat the tofu evenly and heat through for another 2-3 minutes.
  4. Assemble the Tacos: Warm the tortillas in a separate skillet or microwave. To each tortilla, add a portion of the peanut tofu, followed by shredded cabbage, grated carrots, and a sprinkle of cilantro and chopped peanuts.
  5. Serve: Enjoy the tacos warm, with extra lime wedges and sriracha on the side if desired.
