Deliciously Simple Strawberry Coconut Milk Ice Pops
These Strawberry Coconut Milk Ice Pops are a delightful combination of fruity and creamy flavors, making them irresistibly tasty. The sweetness of ripe strawberries melds beautifully with the smooth coconut milk, creating a tropical escape in each bite.
Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 1 cup coconut milk (canned or carton)
- 1/4 cup honey or maple syrup (adjust to taste)
- 1 tablespoon fresh lemon juice
Instructions
- Prepare the Strawberries: In a blender, combine the sliced strawberries, honey or maple syrup, and lemon juice. Blend until smooth, then set aside.
- Mix the Coconut Milk: In a separate bowl, stir the coconut milk until smooth. If you prefer a little sweetness, feel free to add more honey or maple syrup to taste.
- Layer the Mixtures: In your ice pop molds, pour a layer of the strawberry mixture, filling them about one-third full. Then, add a layer of coconut milk, filling the molds to about two-thirds full. Repeat the layers until the molds are full.
- Insert Sticks: If your ice pop molds come with sticks, insert them at this stage. If not, wait until the pops begin to freeze slightly, about 1-2 hours, then insert the sticks.
- Freeze: Place the molds in the freezer for at least 4-6 hours, or until completely frozen.
- Unmold and Serve: To remove the ice pops, run warm water over the outside of the molds for a few seconds. Gently pull the pops out and enjoy your Strawberry Coconut Milk Ice Pops!
