  • 2 duck legs, skin on
  • 1 cup pearl barley, rinsed
  • 4 cups chicken or duck broth
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Sear the Duck: In a large pot, heat olive oil over medium heat. Add the duck legs, skin side down, and sear until golden brown, about 5-7 minutes. Flip and cook for another 5 minutes. Remove the duck and set aside.
