Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 1 cup pearl onions, peeled
- 2 medium carrots, sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Brown the Beef: In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.
- Sauté Aromatics: In the same pot, add pearl onions and carrots. Sauté for about 5 minutes until they start to soften. Add minced garlic and cook for another minute.
- Combine Ingredients: Return the browned beef to the pot. Stir in tomato paste, thyme, bay leaf, and season with salt and pepper. Pour in the red wine (if using) and beef broth.
- Simmer: Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 1.5 hours, or until the beef is tender.
- Serve: Remove the bay leaf before serving. Ladle the soup into bowls and garnish with fresh parsley if desired.
