  • 2 pounds small red or yellow potatoes, washed and halved
  • 1 head of garlic
  • 3 tablespoons olive oil, divided

  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
