These jello parfaits consist of layers of red and green gelatin, combined with whipped cream and fresh fruit for added flavor and texture. The recipe takes about 2 hours to prepare and chill, serving approximately 6 people.

Ingredients

  • 1 package (3 oz) red gelatin (strawberry or cherry flavor)
  • 1 package (3 oz) green gelatin (lime flavor)
  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh fruit for layering (such as strawberries, kiwi, or blueberries)
  • Mint leaves for garnish (optional)

Instructions

  1. Prepare the Red Gelatin: In a bowl, dissolve the red gelatin in 1 cup of boiling water. Stir until fully dissolved, then add 1/2 cup of cold water. Pour into serving glasses, filling them halfway. Refrigerate until set, about 1 hour.
  2. Prepare the Green Gelatin: In another bowl, dissolve the green gelatin in 1 cup of boiling water. Stir until fully dissolved, then add 1/2 cup of cold water. Once the red layer is set, carefully pour the green gelatin over it. Return to the refrigerator and chill until fully set, about 1 hour.
  3. Make the Whipped Cream: In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  4. Assemble the Parfaits: Once the green layer is set, add a layer of whipped cream, followed by a layer of fresh fruit. Repeat the layers until the glasses are filled.
  5. Garnish and Serve: Top with additional whipped cream and mint leaves if desired. Serve chilled.
