Ingredients

  • 1 cup long-grain white rice
  • 4 cups water
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup pumpkin puree
  • 1/4 cup sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

Instructions

  1. Rinse the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Soak the Rice: In a bowl, combine the rinsed rice and water. Let it soak for at least 2 hours or overnight for best results.
  3. Blend: After soaking, drain the rice and add it to a blender with 2 cups of fresh water. Blend until the rice is finely ground.
  4. Strain: Pour the blended mixture through a fine mesh strainer or cheesecloth into a pitcher, discarding the solids.
  5. Mix Ingredients: To the strained rice water, add milk, pumpkin puree, sugar, vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt. Stir well to combine.
