Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • 1 cup heavy cream
  • 1/4 cup brewed espresso or strong coffee, cooled
  • 2 tablespoons cocoa powder
  • 1/4 cup powdered sugar
  • Chocolate shavings for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 250°F (120°C). Line two baking sheets with parchment paper.
  2. Make Meringue: In a clean mixing bowl, beat the egg whites until foamy. Add cream of tartar and continue beating until soft peaks form. Gradually add granulated sugar, beating until stiff peaks form. Mix in vanilla extract.
  3. Pipe Meringue: Divide the meringue into two equal portions and pipe onto the prepared baking sheets in circular shapes. Bake for 1.5 hours or until dry and crisp. Turn off the oven and let the meringues cool inside.
  4. Prepare Mocha Filling: In a separate bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar, cocoa powder, and cooled espresso, mixing until well combined.
  5. Assemble the Cake: Once the meringue layers are cool, place one layer on a serving plate. Spread half of the mocha filling over it, then top with the second meringue layer. Spread the remaining filling on top.
  6. Garnish: Optionally, decorate with chocolate shavings before serving.
