Crisp Filipino Silvanas Cookies With Creamy Buttercream Centers

Silvanas are the single-serve cousin of sans rival, crisp meringue wafers pressed around buttercream and rolled in crumbs. I keep them in the freezer so the cream stays firm and the wafers snap.

With a straightforward method, you can create these delicious cookies at home and share them with family and friends.

These Crisp Filipino Silvanas Cookies are a sweet and sophisticated dessert option. Each cookie features a crispy outer layer with a rich buttercream filling, perfect for satisfying your sweet tooth. This recipe makes approximately 12 cookies and takes about 60 minutes to prepare and assemble.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 cup finely ground cashews or almonds
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • Additional ground nuts for coating

Instructions

  1. Make the Buttercream: In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing until smooth, then add the vanilla extract and milk to reach the desired consistency.
  2. Prepare the Wafers: Combine the all-purpose flour, cornstarch, and salt in a bowl. Gradually add the dry mixture to the butter mixture, mixing well. Fold in the finely ground nuts until fully incorporated.
  3. Shape the Wafers: Using a pastry bag or spoon, pipe or drop small rounds of the mixture onto a baking sheet lined with parchment paper. Flatten them slightly.
  4. Bake: Preheat the oven to 350°F (175°C). Bake the cookies for 10-12 minutes, or until lightly golden. Allow them to cool completely.
  5. Assemble: Spread a generous layer of buttercream between two cooled cookie wafers. Carefully coat the edges with ground nuts for extra texture and flavor.
  6. Chill: Place the assembled Silvanas in the refrigerator for at least 30 minutes to firm up before serving.
