Ingredients:
4 3/4″-1″ thick angel food cake slices
2 eggs + 1 egg for meat
1 cup crushed cornflakes + 1 TBSP cinnamon + 1 TBSP sugar
8 oz ground bison
4 slices bacon
1/2 cup sausage pieces, diced
1/4 cup mushrooms, diced
1 tbsp garlic
1/2 cup onion, sliced
2 tsp sugar or stevia + 1 TBSP
1 tsp chili powder
1/2 cup Parmesan, shaved or shredded
1/4 cup arugula
1/3 cup cranberry chipotle cheddar (or other specialty cheddar)
2 1/2″ pineapple slices
2 tbsp heavy cream with 1 TBSP ranch
Directions:
Cut Angel Food Cake into 3/4″-1″ slices. In bowl, mix 2 eggs well. In another bowl, combine crushed cornflakes, cinnamon and sugar and mix well. Dip cake slices first into egg mixture, then cornflakes, then place in medium low heat buttered saucepan. Repeat for 3 other slices. Watch closely til cornflakes turn golden brown. In same pan over low heat, place onion slices with 1 TBSP sugar or stevia to caramelize. In large bowl, mix bison, sausage, mushroom, garlic, stevia, chili powder, and egg. Make into 4 patties and pan fry over medium heat in saucepan. To build sandwhich, place cake slice, then cooked bison, parmesan cheese, arugula, cranberry chipotle cheddar (or other specialty cheese), slice of pineapple, ranch cream, carmelized onion and finally last angel cake slice. Enjoy!
