Ingredients

  • 4 large bell peppers (any color)
  • 2 cups cooked pasta (penne or rotini works well)
  • 2 cups cooked chicken, diced or shredded
  • 1/2 cup Caesar dressing
  • 1 cup shredded Parmesan cheese, divided
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/4 cup chopped fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Prep the Peppers: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
