Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes with green chilies
  • 1 cup corn, frozen or canned
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Sauté Aromatics: In a large skillet, heat a little oil over medium heat. Add the chopped onion and garlic, and sauté until softened (about 3-4 minutes).
  3. Combine Ingredients: In a large mixing bowl, combine the shredded chicken, white beans, diced tomatoes, corn, sautéed onion and garlic, chili powder, cumin, salt, and pepper. Mix well.
  4. Assemble the Casserole: Spread half of the chicken and bean mixture in a greased 9×13 inch baking dish. Layer half of the shredded cheese on top. Repeat with the remaining mixture and top with the remaining cheese.
  5. Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  6. Serve: Let the casserole cool for a few minutes before serving. Garnish with sour cream and chopped cilantro, if desired.
