Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 6-8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream for serving (optional)
  • Chopped green onions or cilantro for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Beef: In a large skillet, brown the ground beef over medium heat. Add chopped onion and garlic, cooking until the onion is translucent.
  3. Add Beans and Tomatoes: Stir in the black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for another 5 minutes to combine flavors.
  4. Layer the Bake: In a greased baking dish, add a layer of tortillas on the bottom. Spread half of the beef mixture over the tortillas, then sprinkle with cheese. Repeat the layers, finishing with a top layer of tortillas and remaining cheese.
  5. Bake: Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
