Ingredients

  • 4 large bell peppers (any color)
  • 2 cups cooked shredded chicken
  • 1 cup BBQ sauce (your choice)
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Prep the Peppers: Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes.
  2. Make the Filling: In a mixing bowl, combine the shredded chicken, BBQ sauce, corn, half of the cheese, garlic powder, salt, and pepper. Mix well until everything is thoroughly combined.
  3. Stuff the Peppers: Spoon the BBQ chicken mixture evenly into each of the prepared bell peppers. Place the stuffed peppers upright in a baking dish.
