Do you ever look in your fridge and wonder what to do with those extras? We decided to put together these lively nachos with ours! The great thing about nachos is that you can put nearly everything on them and as long as there is enough cheese, it will satisfy those munchy cravings! There can never be too much chicken or cheese.
Ingredients:
1 large chicken breast
2 tbsp butter
2 tbsp oil
salt and pepper to taste
1 tbsp garlic
1 tsp red pepper flakes
1 cup pico de gallo
1/2 cup mushrooms
1/2 avocado
1/2 cup yellow pepper
lime to taste
1/2 cup cucumber
1/8 cup cotija cheese
1/2 cup mozzarella
1/8 cup cilantro
1/4 cup quinoa
1/4 cup corn
1 tbsp chives
2 tbsp onion flakes
1 bag Nacho cheese flavored corn chips
Nacho Cheese:
1/4 cup sour cream
1 tbsp ranch dressing
11 slices cheese singles (cheddar is
our favorite) or large package
1/2 tsp onion flakes
1 tsp garlic
1 tsp chives
1 cup cojita cheese
Directions:
In medium saucepan over medium heat, warm olive oil and add chicken, butter, salt, pepper, red pepper flakes, and cumin. Cook both sides to a golden brown, then remove from heat. Dice chicken pieces. Set aside.
In large bowl, begin layering nacho corn chips, followed by all toppings in order you desire. Set aside. In medium pan, turn heat to medium. Add sour cream, ranch, cheese singles, flour, garlic, chives, onion flakes, and cojita cheese. Mix well and do not allow to sit. Allow to fully melt. If it is too thick, add water by tablespoons until you get desired consistency. OR just use premade store bought velveeta type cheese. Pour cheese over top entire mixture, and garnish with cojita, chives and cilantro. Yum!
