My grandma and mom used to make Zucchini Bread all the time and around Mother’s Day we created this waffle recipe in their honor. Â Keeping the toppings simple with butter and maple syrup, it’s one of those breakfasts that you’ll want to make every Sunday morning!
Ingredients:
2 cup shredded zucchini
1/8 cup chocolate chips
1/8 cup chopped pecans
3/4 cup waffle mix
1 egg
4 tbsp coconut oil
1 tbsp cinnamon
1/4 cup sugar
1/3 cup water
Butter
Directions:
Heat waffle iron. In medium bowl, mix all ingredients well. Drop batter into waffle iron by 1/2 c increments to fill waffle iron bottom. Close lid, watching closely after approximately 6 minutes. Remove carefully from iron and top with any desired toppings. We stuck with butter and syrup! Enjoy!
