Salmon Wrap

Summer is officially here – are you looking for a quick meal?  This Salmon Wrap is delicious and easy to whip out and the perfect fix on a diet or not.  You could easily substitute chicken or another type of fish for this light dish.  Enjoy it by the pool or out on the porch viewing the sunset!

Ingredients:

Salmon filet
1 tbsp olive oil
1 tbsp minced garlic
cumin, a dash
salt and pepper to taste
1 tbsp dijon mustard
1/2 cup shredded lettuce
1/4 cup tomato, diced
1/4 cup cheddar cheese
2 tbsp sour cream
1/4 cup onion, chopped

In a frying pan, drizzle 1 tbsp of olive oil and fry the salmon filet. Add 1 tbsp of minced garlic, a pinch of cumin, and salt and pepper. Cook until salmon tears apart easily. Put salmon in a bowl and tear it up into small pieces. Lay out our tortilla wrap and add dijon mustard, shredded lettuce, diced tomato, cheddar cheese, sour cream, onion, and salmon. Wrap up your tortilla, using toothpicks to hold it together. Enjoy!
