Pineapple Salsa

We’ve all had the classic tomato-based salsa with varying levels of spice.  Maybe you’ve even taken a walk on the wild side and tried a different version like mango salsa.   But what you probably have never tasted is the perfect little flavor explosion that occurs on your taste buds when you toss a little pineapple into the mix!   Pair that with fresh baked homemade tortilla chips and you’ll be ready to grab a drink and call this happy hour!

Ingredients:

1 1/2 c pico de gallo
1 c pineapple, diced
1 c pomegranate seeds
2 TBSP garlic, minced
dash of red pepper flakes
1 tsp sugar

3 tortillas of choice (ie: spinach and herb, flour, whole wheat)
1/8 c oil

Directions:
Combine all ingredients except tortillas, and mix well.
Using pizza cutter, cut tortillas into 4 pieces, then cut those pieces in half as well.
Over medium low heat, pour 1/8 c vegetable oil in medium saucepan, place tortillas into pan, turning once they get slightly golden. Cook all in that way, lightly sprinkle with a little salt if desired. Enjoy your homemade sweet and salty salsa and chips!
