Ingredients
- 1 pound ground beef
- 3 cups cooked rice (preferably day-old)
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 tablespoons vegetable oil
- 3 tablespoons soy sauce (adjust to taste)
- 2 large eggs, beaten
- 2 green onions, sliced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Cook the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Add Vegetables: Stir in mixed vegetables and cook for 2-3 minutes until heated through.
- Add Rice: Push the beef and vegetables to the side of the pan. Add remaining oil, then add the cooked rice. Stir-fry for 3-4 minutes, mixing well with the meat and vegetables.
- Season: Pour the soy sauce over the rice mixture. Add garlic powder, onion powder, salt, and pepper. Stir thoroughly to combine.
- Add Eggs: Push the rice to one side of the pan and pour the beaten eggs onto the other side. Scramble the eggs until fully cooked, then mix into the rice.
- Finish: Stir in sliced green onions and adjust the seasoning if needed. Serve hot.
