Ingredients

  • 1 pound ground beef
  • 1 cup uncooked rice (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes with green chilies (or plain diced tomatoes)
  • 1 cup beef or chicken broth
  • 1 medium onion, chopped
  • 1 cup bell peppers, diced (any color)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Chopped cilantro for garnish (optional)
  • Sour cream and salsa for serving (optional)

Instructions

  1. Brown the Beef: In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft, about 5-7 minutes. Drain excess fat if necessary.
  2. Add Vegetables: Stir in the diced bell peppers and cook for another 3-4 minutes until softened.
  3. Incorporate Other Ingredients: Add the uncooked rice, black beans, diced tomatoes, broth, chili powder, cumin, salt, and pepper. Stir well to combine.
  4. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Add Cheese: Remove the lid, sprinkle shredded cheese over the top, and cover again until the cheese is melted, about 2-3 minutes.
  6. Serve: Garnish with chopped cilantro and serve with sour cream and salsa if desired.
