These Eyeball Jello Shots are made with layers of gelatin to create a creepy yet delicious dessert. The recipe takes about 3 hours to set and serves approximately 12 shots. Perfect for a Halloween gathering, these treats combine fun flavors with a frightful appearance.

Ingredients

  • 1 cup boiling water
  • 1 package (3 oz) of green gelatin (lime flavor)
  • 1 cup cold water
  • 1 cup vodka (optional for adult version)
  • 1 can of lychee fruit, drained
  • 12 blueberries or chocolate chips
  • 1 package (3 oz) of red gelatin (cherry flavor)
  • 1 cup boiling water (for red layer)
  • 1 cup cold water (for red layer)

Instructions

  1. Prepare the Green Layer: In a mixing bowl, dissolve the green gelatin in 1 cup of boiling water. Stir until fully dissolved. Add 1 cup of cold water and vodka (if using).
  2. Fill Shot Glasses: Pour the green gelatin mixture into shot glasses, filling them about halfway. Place them in the refrigerator to set for about 1-2 hours.
  3. Prepare the Eyeballs: While the green layer sets, take the lychee fruit and place a blueberry or chocolate chip inside each lychee to create the ‘eyeball’.
  4. Prepare the Red Layer: In another mixing bowl, dissolve the red gelatin in 1 cup of boiling water. Stir until fully dissolved. Add 1 cup of cold water.
  5. Add Eyeballs: Once the green layer has set, carefully place one lychee eyeball in each shot glass. Pour the red gelatin mixture over the top to cover the eyeballs.
  6. Final Set: Return the shot glasses to the refrigerator and let the red layer set for an additional 1-2 hours.
  7. Serve: Once fully set, serve the Eyeball Jello Shots chilled and enjoy the spooky fun!
