Ingredients:
3 eggs
6 oz chopped bacon
1 medium tomato
1/2 white onion
1 avocado
2 tbsp olive oil
2 tsp cilantro
2 tortillas
Serves 2
Directions:
In a frying pan, pour a tablespoon of olive oil and let warm. Crack eggs and salt and pepper. Add chopped bacon and fry. Remove from heat.
On a cutting board, chop a tomato, onion, and scoop out an avocado into a bowl. Add olive oil, salt and pepper, and cilantro and mix. Lay out a tortilla and pour the vegetable mix and egg onto one side. Wrap up the tortilla and enjoy!
