Chicken Slider Biscuits

This fantastic recipe for tasty mini sandwiches is a bit of a parallel to chicken parmesan, only with 2 subtle differences.  First of all, instead of a bun, we’ve gone biscuit style – which gives these a bit of that “comfort food” type element.   And we’ve put them in the form of sliders, which pair well with fries, onion rings or (to air on the healthier side) a nice salad.  You choose!

Ingredients:

2 eggs
1/4 cup Parmesan
1 cup milk
1 cup flour
Bread crumbs
2 tbsp parsley
1/4 cup Parmesan
4chicken cutlets
2 mozzarella cheese strings
Vegetable cooking oil
4 Biscuits
Marinara sauce
8 slices of mozzarella

Directions:
Bake biscuits at 350° for 25 mins (or however instructed on package). Add parsley and Parmesan to bread crumbs. Cut one slice into each chicken cutlet and put halved mozzarella cheese strings inside. Dip chicken cutlets in milk, flour, egg, then bread crumbs.

Heat cooking oil in frying pan on medium heat and cook chicken.
Cut the biscuits open, place sliced mozzarella, chicken cutlet, marinara sauce, another slice of cheese, and top off with the top half of the biscuit. Broil in oven for 5-10 minutes and enjoy!
