Festive Spiderweb Linzer Cookies

These Linzer cookies feature a buttery almond dough filled with raspberry jam and topped with a chocolate spiderweb design. The recipe takes about 1 hour from start to finish and yields approximately 24 cookies.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup raspberry jam
  • 1/2 cup semi-sweet chocolate chips (for spiderweb decoration)
  • Powdered sugar for dusting (optional)

Instructions

  1. Prepare the Dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  2. Mix Dry Ingredients: In another bowl, whisk together the all-purpose flour, almond flour, and salt. Gradually add the dry mixture to the wet ingredients, mixing until a dough forms.
  3. Chill the Dough: Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Roll Out the Dough: Preheat the oven to 350°F (175°C). On a floured surface, roll out one disk of dough to about 1/8 inch thick. Cut out shapes using a cookie cutter, and cut out centers for half of the cookies.
  5. Bake: Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes or until lightly golden. Allow to cool completely.
  6. Assemble the Cookies: Spread raspberry jam on the solid cookies and top with the cut-out cookies. Press gently to adhere.
  7. Decorate: Melt the chocolate chips in a microwave-safe bowl. Use a piping bag or a small plastic bag with a corner snipped off to drizzle chocolate in a spiderweb pattern on top of the cookies.
  8. Serve: Dust with powdered sugar if desired and enjoy your festive Spiderweb Linzer Cookies!
