Ingredients
- 2 cups fresh spinach
- 1 ripe banana
- 1 cup Greek yogurt
- 1 cup almond milk (or any milk of choice)
- 1 tablespoon honey or maple syrup (optional)
- 1 teaspoon vanilla extract
- 1/2 cup granola or toppings of choice (optional)
Instructions
- Blend the Green Layer: In a blender, combine the spinach, banana, Greek yogurt, almond milk, honey, and vanilla extract. Blend until smooth and creamy.
- Prepare the Molds: Pour a layer of the green smoothie mixture into popsicle molds, filling them about one-third full. Tap the molds gently on the counter to remove any air bubbles.
- Freeze the First Layer: Place the molds in the freezer for about 30 minutes, or until the first layer is firm.
- Add More Layers: Once the first layer is set, add another layer of the green smoothie mixture, filling the molds to about two-thirds full. Return to the freezer for another 30 minutes.
- Finish and Freeze: After the second layer is firm, fill the molds to the top with the remaining smoothie mixture. Insert popsicle sticks and freeze for at least 4 hours or until completely solid.
- Serve: To remove the pops, run warm water over the outside of the molds for a few seconds. Gently pull the pops out and enjoy your festive Christmas Tree Yogurt Pops!
