Caramel Java Pie

Coffee lovers, this special dessert will be right up your alley!  Not only does it have that java kick to it, but it’s rich and chocolaty too.  This pie is super easy to make and a bit customizable – you can interchange any flavor of Oreo for your crust and pop any candy bar or cookie pieces of your choice in the pudding goodness.  Next time you’re called upon to bring dessert somewhere, try this – you won’t be sorry!

Ingredients:
1 box instant pudding mix (chocolate, mocha, caramel or white chocolate flavors)
1 cup coffee double espresso
1/4 c heavy cream
8 oz cool whip
1 packaged oreo cookie pie crust OR 25 oreo cookies of choice, pulverized
5 tbsp melted butter
1 cup white chocolate chips
1 cup candy bar pieces or cookie pieces, chopped

Garnishes:
dark chocolate covered espresso beans
whipped topping
caramel sauce or syrup

Directions:
In large mixing bowl, mix instant pudding mix, espresso, cream, cool whip, until well blended. Fold in chocolate chips and any other candy bar or cookie pieces. Pour mixture into cookie pie crust then freeze for 6 hours, until solid. When ready to serve, add whipped cream and chopped chocolate covered espresso beans. Enjoy your caffeinated sugar rush!
